This wine was handpicked from Sawmill Creek Vineyards on October 28, 2021. Our vineyard team rigorously hand sorted the grapes while picking. Following this, it went onto our sorting table for a second time where the winemaking team sorted every cluster by hand, selecting the ripest and cleanest fruit given to us in the harvest. The fruit was crushed into a tank where it was allowed to ferment for 3 weeks. The wines were pumped over twice daily to increase color and tannin extraction. Following fermentation, it was pressed into a combination of new and used French oak barrels. The wine rested in elevage for 10 months before being bottled in the summer of 2022.
