Essence is a Bordeaux style blend of Cabernet Franc, Cabernet Sauvignon and Merlot. The grapes were all hand harvested from Sawmill Creek Vineyards, hand sorted, destemmed and fermented separately for 16 to 18 days, includig a few days for extended maceration. The grapes were fermented using indigenous yeast. Press and Free Run were barreled separately. This blend reflects those barrels that stood out as the absolute best in the cellar, all of which aged in a combination of new and 1 to 5 year old French, Hungarian and American oak barrels. Elevage lasted 11 months until the wines were blended and prepared for bottling in September 2021. Essence is unfined/unfiltered.
